Do you remember me making Oat banana cups last summer? Well, I just upgraded them to Banana & otmeal muffins and I have to say these taste amazing!
However, of you're interested in the other version, click here. In a meantime I will share a super easy and quick Oatmeal muffin recipe.
Another way how I tricked myself into using oats on a daily basis.
Some of the ingredients are optional, so you can skip them for even healthier option.
To make 6 medium size muffins you will need:
1 ripe banana
1/2 cup almond milk (or any other milk of your choice)
1 tbsp raw honey
1 egg
1 cup rolled oats (I used organic ones)
Handful of chocolate chips
Pinch of salt and cinnamon
1 tsp baking powder
Directions: preheat your oven to 170 degrees.
In a separate bowl mix together oats, chocolate chips, baking powder, salt & cinnamon. In another bowl mash the ripe banana, then add egg. Mix it well. Pour in honey and milk.
Mix together both bowls and stir it well. Pour the mixture into silicone moulds (or use muffin tray, but then I would suggest to put the paper thins inside or spray it with some oil).
Bake for 10-15 minutes until golden brown.
Few serving options:
serve them without adding anything
serve them warm with your favourite ice cream
serve them cooled with plain yogurt and some extra chocolate chips on the top
Optional: I like to add some lemon juice and honey to the yogurt.
To make more muffins just double the ingredients. You can skip chocolate chips or add raisins or any other nuts or berries.
