I used to buy M&S pistachio & lemon cookies but then I tried to make them by myself and I have to say that from now on I will be making only these!
From this amount of dough you will make approximately 30 cookies and that's a lot! I experimented with shapes and sizes and you can try to do the same or just refer to a cookie size that you like.
Some tips:
If you want very light lemon flavour, just add less lemon zest or just don't add it at all
You can also add less pistachios to the dough and add more when decorating
Decorating with white chocolate & pistachios is optional. They will taste amazing without anything on top (I decorated only half) or you can use classic cookie frosting made of confectioners sugar and some lemon juice.
Ingredients:
170 gr unsalted butter (room temperature)
200 gr brown sugar
280 gr flour
1 egg
zest from 1 lemon
40 gr pistachio (crushed) + decorating
50 grams white chocolate
Directions:
Add butter to a bowl and beat it with a mixer for 5 minutes. Then add brown sugar and continue beating for another 3 minutes.
Then add lemon zest, egg, crushed pistachios and mix everything together. Then add flour and using your hands roll the dough into a ball. Cover it with a cling film and let it sit in the fridge for 2 hours.
Preheat oven to 170 degrees. Then, depending on a size you prefer, roll out walnut size balls and press them lightly to make cookies flatter (I used glass tumbler for that).
Bake 10-12 minutes until golden brown. Baking time also depends on how thin your cookies are.
Let them cool down and decorate with white chocolate & pistachios.. or don't. They will taste amazing in both ways.
