This discovery definitely improved my relationship with oats and I have to say that overnight oats are one of the best options if you're not a fan of the classic oat porridge.
They also will taste totally different and there are hundreds of ways how to make them.
Before I tried to make Ice cream overnight oats I used to make these using Greek yogurt, bananas, dried fruits and nuts, honey and cocoa powder, but this is another level of overnight oats.
From the following ingredients you can make two portions, however if you want to make these only for you, then reduce all ingredients by half.
Also don't be afraid to swap or just exclude something if you don't like it. Just pick a good ice cream as it's the main ingredient.
For two jars (portions) of Overnight oats you will need:
3/4 cup gluten free oats
1/2 cup almond milk
1/2 cup vanilla ice cream
1/2 cup blueberries
1 tbsp honey (or maple syrup)
Pinch of salt
1/2 tsp cinnamon (optional)
Just combine all ingredients together, stir well and leave in the fridge overnight or at least for 6 hours. I used my air-thight glass containers for that.
Decorate with some berries and granola (optional). I believe that any other ice cream would work well too.
