One more delicious and simple cookie recipe coming from my childhood (still remember myself begging to my mum to bake these).
There always has been beautiful and very extraordinary cookies, that tasted amazing and that also were hard to find in stores, but along with these there also existed very simple ones, without any decorations or extra ingredients.
And one of these were oat cookies made of oats and few more ingredients. I know I said I'm not a big fan of oats, but these are ones of rare things made of oats that I really enjoy.
I made the basic ones, but you can also add some sunflower seeds, raisins, chocolate or any other ingredients, that goes well together with oats.
Just keep in mind that you will need high quality oats (I used organic oats).
For these cookies here I used:
2 cups rolled oats
1 tbsp butter (can substitute with coconut oil)
4 tbsp granulated sugar
1 egg
1 tsp baking powder
As I mentioned before, if you want to you can add other ingredients too. For example, these cookies also goes very well together with dark chocolate, so you can add some dark chocolate chips (1/2 cup).
Other options - raisins, I would add 3/4 cup the as they are very sweet.
How to make these cookies?
Sift oats first and then roast until they turn golden. Let them them cool down completely.
Preheat the oven to 180 degrees. and prepare a baking tray.
Sift the flour and baking powder. Set aside.
In a separate bowl cream the butter and sugar with electric mixer,then continue beating by adding egg. Add the sifted flour mixture and stir in oats.
Use a spoon to scoop cookies, place approx. 1 tsp on the baking tray and press a little bit.
Bake for 10 minutes until they turn golden brown.
You can store them in air-tight container for couple days, I kept them in a glass jar and they disappeared very quick.
If you want to you can skip the sugar, just add 1 tbsp honey instead. They will be less sweet, but still good.
