My truffles story

Finally I sat down to write about my truffle adventure, some thoughts have been on my mind for past few days.


I have to say this was a real challenge even with only 2 ingredients (I mentioned before that I prefer easy recipes). Lesson learned, don't take everything for granted when it says easy or simple.


I have to say, I got chocolate everywhere - on my hands, on my clothes, all over kitchen and so on. It's not that I complain, I love chocolate.


However lets move to the nice introduction how I got there. As most of the times I was just looking for something easy to make and what ingredients I had in my kitchen. And then a lovely picture of truffles popped up on my Instagram. That was enough!


A funny thing is that I never buy truffles. They always have been gifted to me or found in my grandmas secret treasure spot. It's not that I eat them often, but there is something I really like about the truffles. I guess it's a shape or simplicity, or just a whole idea that they are made of chocolate.


I have tried so many of them, thanks to the person who makes every single truffle with her own hands. It's such a beautiful and accurate process. That's why I eat them slowly and gentle, otherwise I would finish them in 5 minutes (it's a pure chocolate)!


However I went through like hundreds of recipes including a whole Instagram feed. Then I found this 2 ingredient recipe - believe it or not (sometimes I still got that old-fashioned thinking that you need loads of ingredients to make something delicious). Actually it's 3 if you count a vanilla extract. And it's vegan.


I made few of them and as a chocolate addict I had like 2 in the end. This happens to me quite often, maybe I shouldn't try to taste it so many times, especially when I know that they can't turn out wrong... except if you burn the chocolate.


So, I used:


250 grams of dark chocolate

9 tbsp of coconut milk

1/2 tsp of vanilla extract


The most hardest thing was to chop all that chocolate, at least I knew what to do with rest of the coconut milk (another pudding coming soon).


Place the chopped chocolate in the mixing bowl.

In a separate bowl add coconut milk and microwave it until it's very warm (not hot).

Add that coconut milk to chocolate and cover the bowl. Leave it for 5 minutes.


Gently stir it with a mixing spoon (not too much). If it's needed place it in the microwave for few seconds. Try to avoid stirring as much as possible.


And then it's time to place them in the fridge. I have to be honest that I placed them in a freezer instead of fridge, so don't do that. That just gave me an extra work to bring them back to beginning.


After my mistake I chilled them for 1 hour (you might need 2 - 3 hours, it depends of the fridge and a mixture). It's ready when chocolate doesn't stick to a knife.


And then the satisfying process. Size is totally up to you - I went for the medium. Toss them in a cocoa powder to coat. Another good option are hazelnuts. But as you know there are so many options to choose, so pick your favourite. Enjoy!
