My muffins story

Last time when I baked a real muffin was at least 7 years ago. And I can definitely count how many different ones I have baked in my entire life.

The number is 4: banana, Snickers, chocolate and marmor (this one seemed pretty cool). That's all I know about muffins.


However I have tried much more. And my favourite one is quite basic - a classic raisin muffin which I really love, but if I have to go a bit more fancier then it's a pumpkin. That's weird, isn't it? Especially when you have like thousands of flavors around you.


And the funniest thing is that baking the muffin was never my intention. But that long, long time ago someone gifted me a muffin baking guide and that for sure wasn't a book (it was more like a magazine you can buy with your morning coffee). I assume that person believed that baking was my hobby or something. Don't get me wrong, I enjoy it but I wasn't obsessed with cooking then.


But that was enough to give a try. And I baked these 4 different flavor muffins a few times, after a while I moved to a new house, lost my book during the move and also with all that - my ambitions to bake more muffins.


I still sometimes eat muffins but eating them never brought ideas of baking them to me ever again. But the day when I was looking for something new to cook/bake came and that wasn't that long ago.


And of course a beautiful picture of lemon - blueberry cake came up, but I wasn't in a mood for a cake but I was in a mood for muffins. There will be cake soon, I promise.


There was only one rule: use products that I have at home. Luckily for me and the muffins two days ago we went for some grocery shopping and we bought some fruits, including blueberries. And I saw the cake picture. Coincidence?


I have to say I got everything for my muffins. That doesn't happen often. I used my very simple and basic muffin recipe and as I use all kinds of flour there wasn't any obstacles to bake the perfect muffins.



For that you will need:


1 cup of blueberries 150 grams of butter 100 grams of sugar 1 egg 3 tbsp of sour cream 1/2 tsp of vanilla extract or vanilla sugar 200 grams of flour 1 tbsp of baking powder a pinch of salt


As I didn't had a kitchen scale I used tablespoons to measure ingredients. 1 tbsp = 15 grams. And dough came out perfect, actually even better than I expected.



And it's so easy! Just melt the butter, then add sugar, egg, sour cream and vanilla in one bowl. Then in other one mix rest of the ingredients (except blueberries).


Stir the ingredients of both bowls together. The dough should be medium thick to avoid smashing blueberries. If the dough is too thick add some milk. Add blueberries, fill the dough in baking tins and bake them in 180 degrees for 20-30 minutes until muffins raise and turn golden brown.



I have to say they turned out amazing! I was surprised because, honestly, I didn't expect that.


I think I ate them straight from the oven and I have to say they tasted amazing when they were warm.

Actually before I baked them I was considering to make some cream for toppings but there was no need for that at all.
