I like to call them fake cheesecakes because there is no cheese involved. Basically these are plant based, super delicious, soft, miniature cakes for sweet tooth like me.
Technically this is a pudding that I made before turned into cheesecakes and I categorize them as no bake miracles.
Also it's a good option if you prefer cupcakes or any smaller size cakes than normal ones. It's like to have a slice of cake, just in a different shape.
Only thing you have to do in advance is to soak cashews in a boiling water for 3-4 hours (overnight if possible), buy a coconut milk or cream and your favourite chocolate or chocolate chips.
I used my non-stick muffin tray and paper liners, if you have a silicone mould, even better. Make sure that you have some free space in your freezer and that's it.
I made 8 fake cheesecakes. You will need:
Base:
1/2 cup walnuts
4-6 soft dates
2 tbsp cacao powder
1 tsp honey
Light chocolate layer:
1 cup cashews
100 grams white chocolate (melted)
1 tsp cocoa powder
4 tbsp coconut milk (white cream from the top)
Dark chocolate layer:
1 cup cashews
100 dark chocolate (melted)
4 tbsp coconut milk (white cream from the top)
To make the base just add all ingredients to a food processor and blend it into a sticky mixture. Add approx. 1 tbsp to each liner and press it well. As cakes will be quite sweet you can skip the honey.
Then add all ingredients for light chocolate layer to the processor and blend it until it becomes smooth and creamy. Add approx. 1 and 1/2 tsp to each liner. Even it out and place it in a freezer for 20 minutes.
In the meantime prepare a dark chocolate layer in the same way as the light one. Add the mixture to the each liner and place cakes in the freezer for 2 hours.
I suggest to taste all layers before putting them in liners. You might have to add more honey if you want cakes to be more sweeter.
You can decorate them with fresh berries or chocolate crisps.

Have only one chocolate layer instead of two
Make base of almond meal and dates or have your own base
This is my favourite snack so far. No bake, soft and sweet, and always possible to play around with ingredients.
