My cookie story

I am a real cookie addict. And also I am not very selective when it comes to the cookies. There is only one rule - I prefer them softer than crunchy.


Actually I haven't been really focusing on making my own ones because why do you need to do that when you have a whole drawer in the kitchen full of cookies?


To be honest I can definitely count how many times I have been making my own ones.


But it is good to have a balance in the kitchen, right? And give a try to something else than cakes and puddings.


I made these inspired by a picture. A picture that was eye - catching enough. Home made cookies +1. What else? A super easy recipe. By that I mean only few ingredients and 15 minutes of your free time. Another plus to these guys.


What I would do differently? Definitely higher quality peanut butter. So, go for a good one. That's my advice. And a suggestion for the future myself, haha!


I definitely enjoyed that dough making process - sticky, but not too sticky and relaxing for sure. And a possibility that you will ruin it or something will go wrong is 0. Just remember - a key ingredient is the peanut butter.


Would I go for another try? If I have to be honest - I don't think so. They were delicious and soft, but I prefer to have the peanut butter on my toast, that's it. But if you are looking for a quick - non bake snack and you love the peanut butter it's a good choice.


However you might give a try to these cookies and for that you will need:


3/4 cup of oats

1/4 tsp of cinnamon

a pinch of salt

1/4 chopped peanuts

1/4 cup of dark chocolate chips

1 cup of peanut butter (go for a good one as I mentioned before)

2 Tbsp raw honey

1 tsp of vanilla extract


There aren't specific rules how to mix together all ingredients. Just combine all of them and then the rest is up to you. I went for a classic round shape. But the dough came out very soft and easy to play with so I bet you will be able to make whatever you want. I was patient that day so I placed them in a fridge for a few hours, if you're not then freezer will help you speed up this process.


However this was a very fun thing to do, because some of them turned out with a very interesting expressions I would say. So I named this top one as a Happy cookie.


Same might happen to you if you go for a bigger chocolate chips (these are from Dr. Oetker).


They can stay in the fridge for couple days but if you're a cookie addict like me then they will not last for that long.
