My chocolate coconut balls story

Main reasons why I came up with these:


- 2 ingredient truffle recipe, that I made before

- No bake option

- Coconut chocolate slices that I made yesterday (recipe by @alicepages)

- Ingredients that I have tried in other recipes.


I also mentioned that I prefer peanut butter on a toast and I have some unresolved issues with oats. So here is a solution, both of them plus few more ingredients and chocolate coconut balls are ready to be served.


All amounts of ingredients are approximate so adding something a bit more or less are not going to damage the mixture. Even if that happens you can just add more honey or more oats/almond meal.

I made my own almond meal (flour can be used as well) of 1/2 cup of almonds, I believe that soaked cashews are also a good option in case you don't like almonds.

I really enjoyed the rolling process because it's relaxing and mixture doesn't stick to your hands. And it smells soooooo good!

From the mixture you can make approx. 20 medium size balls, I decided to make them bigger, so the amount was smaller. However, you can reduce all the ingredients by half, if 20 pieces are too much.


You will need:


1/2 cup peanut butter (as always go for a good one, I used @wholearthfoods)

3 tbsp melted coconut oil

4 tbsp honey or maple syrup

3 tbsp cocoa powder


1/2 cup almond meal or almond flour

3/4 cup rolled oats

3/4 cup shredded coconut


Whisk together first 4 ingredients and then add the rest, stir it well and it's ready to be rolled. If you want the mixture to be very smooth then add shredded coconut and oats to a food processor and blend them until they turn into a flour. As I mentioned before, you can add some extra honey/maple syrup or oats/almond meal if needed.


Roll the mixture into balls and coat in the cocoa powder or shredded coconut. How easy is that?

Store them in an airtight container in the fridge (up to 1 week). Chill for 5 -10 minutes before eating.


Another option is to dip them into a melted chocolate for nice chocolate coconut bars. It's completely up to you! Happy Friday!
