My banana bread story


Such a trending thing lately, right? I've been baking a banana bread aka banana muffins long before all this started. Basically this is my muffin recipe turned into banana bread.


Even I really like it (mostly because of a rich banana flavor and softness), I always had a feeling that there is something missing in the whole banana bread thing.


So I decided to upgrade the banana bread with a tasty and sweet banana topping as the banana bread I usually bake isn't that sweet.


You can use your favourite banana recipe anyway for this if you prefer that.




To make this banana bread you will need:


For bread:

2 ripe bananas

1 cup oat flour (you can blend oats)

4 tbsp plain yogurt (or Greek yogurt)

2 eggs

1 tsp cinnamon

1 tsp baking powder


For topping:

2 bananas sliced (depends how big your pan is)

1/2 cup brown sugar

2 tbsp butter

1/2 tsp cinnamon


The oat flour is optional. You can have any of your choice.


Preheat the oven to 180 degrees first and prepare the baking pan. Let's prepare the topping first (technically it's a base, apologies for confusion).

Melt the sugar,butter and cinnamon until it becomes as a sauce. Pour it in the baking tray or pan and put the sliced bananas on the top.


In a bowl mash the bananas. Add the yogurt, eggs and cinnamon. Then fold in flour and baking powder.You can add some vanilla extract for sweetness.


Pour the mixture over banana and sugar topping that you made before and bake it for 25 - 35 minutes.


Let it cool for 20 minutes. Using the plate or another tray flip the bread over. And it's ready!


It tastes even more delicious served with vanilla ice cream on the top.
