My almond cranberry bites


I think it's only fair that I post a recipe for these miracles straight away (usually I do that the other way around), because they are heaven!


I would say these bites are my Sunday's discovery and I was soooooo close to eat all of them. One of the reasons why I didn't have dinner tonight.


You will need an oven for these, however that will only take 5-8 minutes and after that a few more to cool down, that's it.


Also I got few more options for ingredients as substitutes, just in case if you don't like something.



It's so easy to make these bites and you don't need many ingredients. I managed to make one baking tray of these and as you can see I cut them in small squares but the size is totally up to you.


Here are ingredients I used and all the substitutes just in case:


1/2 cup oats (or almond flour)

3 tbsp honey (or maple syrup)

1 egg (or 1 ripe banana)


1 and 1/2 cup almond flakes

1/2 cup dried cranberries


And here are super easy directions:


Pre-heat your oven to 180 degrees. Use a food processor to blend oats into the flour (or use actual oat flour if you have it). In the meantime mix together first 3 ingredients, then add almond flakes and cranberries. Mix it well and then place the mixture on the baking tray. Use a spatula to press it well to make it even and flat.


Bake it for 5-8 minutes but that depends on your oven, however keep an eye on them. I do suggest to lower the temperature just to avoid burning the almond flakes.


You will see that flakes will turn into golden brown, that means it's ready. Let it cool down for another 10-15 minutes and cut it in smaller pieces.



It's a perfect afternoon snack and will take only around 30 minutes to make it.


Also, you can use other nuts and dried fruits as well. I just love this combination, however I might go that extra mile next time and add some more ingredients.
