Lotus chocolate truffles


Festive season is gone, but that doesn't mean we can't have truffles, because there are many other occasions to celebrate like birthdays, Valentines day, promotions, personal achievements or.. need to treat yourself with something delicious and easy to make.


That's right - easy to make and delicious. Something I love about these truffles in same way I love Lotus Biscoff cookies. NOTE: you can swap them for any other cookies, for example, Digestives.


Fun to make. Another reason why to make truffles, also you can play around with ingredients. If the mixture is too runny, add some more shredded coconut or cookies, to dry, add a little bit of warm water or milk. One more thing to mention - you can decorate them with some cookies leftovers, cocoa powder, shredded coconut or not to decorate them at all. They will taste amazing anyway!


Ingredients:

10 -15 Lotus biscuits (might require more)

125 g unsalted butter

1 can condensed milk

1 cup shredded coconut

1-2 tbsp cocoa powder


Anything for coating (I used some leftovers from biscuits, cocoa powder and shredded coconut).


Directions: first prepare the biscuits - either use plastic food bag and rolling pin or blender to get crumbs. Then put butter and condensed milk in a sauce pan over a low heat and stir until the butter melts.

Let the mixture cool down a bit, then add rest of ingredients and stir it well. Roll out your truffles, coat them with desired ingredient and let chill.


I stored them in the fridge and let them chill in room temperature 15-20 minutes before serving. Enjoy!
