Lightweight coffee mousse

This dessert is something special. Something I tried for the first time as a kid and definitely something that you can't forget if you love a light coffee flavor and even lighter dessert.

The funny thing is that I never made this dessert before and this is the outcome on my very first try. There always was an aunt who knew the perfect recipe and used to bring this dessert over or there always was a cafeteria or restaurant where you could order it with your meal.

Lazy me, right? Until that one day when I finally decided that it's THE time to make one by myself and then I realized how easy it is!

This mousse can be served on it's own or with vanilla sauce or berry jelly.

I prepared my mousse in a tray, flipped it over afterwards and cut it in smaller slices, but you can use smaller dessert jars or anything else that comes in your mind.

Ingredients:

200 ml double cream

1/2 cup milk

1 cup sugar

3 tbsp instant coffee

2 tbsp warm water

1 tsp vanilla sugar

1 packet gelatin

Dark chocolate or cacao powder for decorating (optional)

Directions: prepare gelatin by following instructions on packet. Beat double cream with sugar and vanilla sugar until lightweight. You can add less or more sugar depending on your taste, same with coffee if you want either very strong or very light coffee flavor.

Then mix coffee with warm water and add it to the cream. Slowly add prepared gelatin and stir it well.

Fill the mixture in a tray or dessert jars. Refrigerate for couple hours. Then decorate with chocolate or cacao and serve either on it's own or with desired sauce. Enjoy!
